Sweet potato with guacamole is one of my favourite vegan dishes. It is great for dinner for one person, the whole family or as a snack for a party – it all depends on what form you serve it in.

Ingredients (2 servings)
– one big sweet potato (around 600-700g)
– 3 garlic cloves
– olive oil (2 tbsp)
– one avocado
– one medium tomato
– dried chilli flakes (0.5 tsp)
– coriander (1 tsp)
– lime juice (from half or a whole lime)
– salt (0.5 tsp)
It is best to prepare the potatoes first and put them in the oven. In the meantime, you can prepare guacamole.
Step 1: Preheat the oven to 200 degrees Celsius.
Step 2: Wash the potatoes and cut into medallion shapes. You can also peel them (after baking, the skin will come off anyway).
Step 3: Crush the garlic and mix it with the oil. Rub the slices and put them in the baking tray.
Baking time will be different depending on the oven, baking tray and potatoes For me it’s usually about 30 minutes, but every few minutes I check with a fork to see if the potatoes are already soft enough.
Step 1: Peel the avocado, chop it up and shred with a fork or blender.
Step 2: Add salt, coriander, chilli and lime juice. Mix well.
Step 3: Remove the seeds from the tomato and cut it into small cubes. Gently mix it with avocado paste.
A sweet potato should be soft, but it should not crumble. Cover it with guacamole and enjoy 🙂
